Blanquette-Crémant de Limoux

Blanquette de Limoux is a French sparkling wine from Languedoc .

AOC classification in 1938. The AOC Blanquette de Limoux AOC is the first created in the vineyards of Languedoc . We distinguish stew called gross Limoux and Blanquette de Limoux called traditional method . This wine belongs to the vineyards of Limoux with Crémant de Limoux. The grapes Blanquette de Limoux is made from three varieties: - The Mauzac the majority with at least 90% - Chardonnay , - The Chenin blanc . Blanquette de Limoux for the traditional method , only Mauzac is used.

The vineyard Located in the department of Aude and the Languedoc -Roussillon region is grown around the town of Limoux , in the west of the Corbières . The southern slopes of the hills are reserved to the name and have a combination of clay and limestone gravel and light .

The climate of Limoux is favorable to the production of white . The area is influenced by the Mediterranean and the Atlantic Ocean providing lots of sunshine and well distributed in the year and sufficient rainfall.

The winemaking Blanquette and Crémant have the same manufacturing methods . Only stew ancestral method is vinified differently. For the stew , the first fermentation is done separately for the different varieties . We then obtain the base wines that are assembled and which is added a liquor circulation causing a second fermentation taking place in bottle. The wine becomes effervescent during this second fermentation.

After 9 months of rest, the bottles are opened to remove the remaining deposit . The shipping to give the crude character or demi-sec liqueur is added. The bottle is then blocked a final cork stopper . For the stew ancestral method , the fermentation is completely natural and bottling takes place in the old moon in March . The wine contains less than 7 ° alcohol .

History
