Created in 2002 by Philippe Richy, a chemical engineer by training, the Stella * Nova estate produces wines from biodynamic agriculture.
After a very active Parisian professional life, in his forties, Philippe changed his life and trained as a winegrower in Beaune, in Burgundy. After a course in different fields to perfect his apprenticeship, he found vines in Caux, in Languedoc, near Pézenas.
In this area of the Languedoc-Pézenas PDO, a wide variety of terroirs associated with natural vinification allows it to produce around ten vintages, each with a strong identity. The small plots of the vineyard are divided between the terraces of Villafranchian gravel, the limestone and sandstone slopes of the primary era, the basaltic soils (soil of rare volcanic origin) or even the white clay-silty soils of the Miocene. presence of rare geological richness for an area of this size (around 7 ha).
The varied grape varieties are made up of the region's traditional grape varieties, namely syrah, grenache, carignan, cinsault and mourvèdre for the reds and rosé, white grenache and clairette for the whites.
The 15 to 65-year-old vines are grown in a goblet and more rarely in a cordon of Royat. Grassed, they are scratched two to three times a year, both to master the competition according to the seasons and to provide additional nitrogen to the vines. Two to three 500P sprays are made each year. Pruning always carried out in lunar autumn in fruit or flower days. Anticryptogamic treatments by spraying with sulfur sometimes associated with horsetail and by spraying with copper hydroxide (<1 kg Cu / year / ha).
Manual harvest, sorting on the stump and in the cellar on a carpet, maceration of the grapes, destemmed or not, according to the vinification route determined according to the wine that Philippe wants to obtain.
No input except in the event of fermentation problem where Philippe can resort to exogenous strains adapted to the situation. The use of SO2 is only decided if there is a risk of acetic sting on the reds during aging or to prevent early oxidation phenomena on the whites and rosés.
With average yields per hectare of less than 20 hectoliters, the wines always present a complex aromatic palette and a strong structure.
His concern is to produce natural wines, identifying with their respective terroir, but always with great precision, with lots of fruit and without aromatic deviance.
If the wines of Domaine Stella * Nova have the names of stars, it is because Philippe is passionate about astronomy. It is also to remind us that there are strong links between our earth and its cosmic environment. The cuvées have thus taken the names of stars, clusters of stars, constellations ...: Les Pléiades, Polaris, Mira Ceti, Cassiopée, Callisto ...
