Benoît Dorsaz advocates organic, progressive and dynamic viticulture.
In 30 years in the business, Benoît Dorsaz has carved out his own path in the Swiss wine industry. In contrast to body-built standards, his wines reflect what he likes: clarity, elegance and precision. Born into a family of winegrowers, Benoît Dorsaz grew up among the vines. In 1986, Benoît inherited a plot of chasselas. From then on, he rented the vines from his family and undertook the replanting of the vineyard as well as the renovation and expansion of his father's cellar. Little by little, the estate was expanded to ensure efficient and artisanal operations.
Each plot is carefully monitored and the vines flourish within a framework that the winemaker respectfully draws up. The winegrower listens to his terroir.
In the cellar, the same philosophy allows the wines to express the characteristics of each vintage and the particular terroir of Fully, where two massifs overlap.
Grape varieties :
100% petite arvine
Terroir : Commune of Fully. Domaine Les Perches = loess (rock flour from erosion) on gneiss and some moraines. At the foot of the vines, there is a 10 m high block of gneiss, witness of the crystalline massif of the Aiguilles Rouges
Harvest characteristics: manual harvest between 15 and 18 September. Very few "curdled" grapes
Vinification and maturing: De-stemming and skin maceration, very gentle pressing. Indigenous yeasts. Slow fermentation in barrels (65% of the total). Aged in barrels for 12 months. No new wood. 1/3 of the wine was not exposed to wood and was vinified in metal tanks. After 12 months, the two fractions are blended and continue to be aged in vats for a further 6 months.
The ageing of the Petite Arvine in barrels is delicate but brings vinosity and complexity. This vinification is in line with the search for wines of great expression that go beyond the simple expression of the grape variety.
Tasting notes :
This wine requires time to open up on the nose, with complex aromas of ripe fruit and spices. Sapidity, drinkability, balance between roundness and freshness: the magic of arvine on granite soil. A true "table wine", a gastronomic wine, both complex and invigorating.
Benoît Dorsaz's Quintessence is a magnificent wood-aged petite arvine with a shimmering nose of truffle, lime blossom honey and white chocolate. And above all, a superb rich but balanced wine, with a very noble spicy taste, a fine mouthfeel and a full body. One of the best Petite Arvine "fût de chêne" in the Valais, by far!
