Sybil Baldassarre is an Italian oenologist based in Cabrerolles, in the Languedoc. With several professional experiences, she found 3 hectares which allowed her to create her first vintage in 2015. She strongly believes in white wines from the schist terroir of Faugères; she decided to produce only wines of this colour.
Despite the youthfulness of her wines, they have found their way to some of the most renowned restaurants.
Particularly sensitive to the vagaries of the climate, Sybil has begun, in the autumn of 2019, to work on the conservation of old white grape varieties, in collaboration with the Institut National de la Recherche Agronomique (INRA).

In short, Sybil makes superb natural whites at Faugères!

This Rocalhàs cuvée is superbly highlighted by the label designed by my friend Tudal, an artist in Pézenas (Blu Canari).

Grape varieties :
70% white grenache, 15% roussanne and 15% marsanne.

Tasting notes:

The colour is straw yellow. The nose is straightforward, with notes of apple, peach, orange zest and bitter almond. Initially dashing on the palate, this dry wine waltzes between freshness, amplitude and salinity. The minerality of the schist resonates in the glass, then the pep of the orange zest ensures a long finish.

Trout gravlax, grapefruit supreme and pink berries. Couscous of rock fish and fennel.
