Domaine Gauby is worked biodynamically, on limestone, clay-limestone and schist soils.

The Muntada cuvée produced on limestone marls is fleshy, juicy and complex. Its intense aromas of black fruits, blood orange, spices, leather and woody notes are offered during festivals. Fleshy and deep, complex and fine, built on juicy fruits (red and black), revealing a subtly spicy character (liquorice, thyme, pepper) enhanced by floral, leather, empyreumatic touches. Silky tannins, acidity bringing freshness and balance, long lingering finish. A nice acidity brings freshness and the tannins are silky.

Since the mid-1980s, Gérard Gauby, with the help of his son, Lionel, and his wife, Ghislaine, has pursued his quest for the great wine with the perfect balance. He experienced several periods of questioning which gradually led him to a style of tense and digestible red and white wines, which earned him many admirers. Never free of risk-taking, this permanent research, which in the last vintages, under Lionel's impulse, restores primacy to the expressiveness and generosity of the fruit, reveals the complexity of the terroir so geologically varied calce.
Through relentless work of soils and vines, but also by replanting many tree species at the edges of plots, phenolic maturities arrive more quickly, allowing to moderate alcoholic degrees. An exemplary journey of a family that has opened new paths and continues to reinvent southern viticulture.
