Guy, the winemaker vinifies by accompanying nature more than by seeking to contradict it, in the cellar of another Herault abbey, the Abbey Sylva Plana, where he has all the necessary equipment and especially barrels made for aging.

    Grapes:
90% chardonnay, 10% petit manseng.

    Tasting notes:
Expressive with aromas of candied orange, ripe pink grapefruit. The Chardonnay and barrel vinification is then expressed with beautiful notes of brioche bread and vanilla.
Joncs-cella is a powerful wine with a structure supported by a nice freshness of mineral and saline type.

Mineral, oaked and fresh.

scallops, fish in foil, lobster.
