For Roman Niewodniczanski, the Ockfener Bockstein terroir represents an ideal terroir for pushing the maturity of Riesling and developing great wines in late harvest.
The old vines, aged between 50 and 100 years, occupy a very steep hill in the heart of a narrow valley formed by a small tributary of the Saar. Here, the vines are protected from the wind and the micro-climate is quite hot and often humid in the morning. In addition, the slate soils are based on a subsoil of very old sedimentary rock, the "grauwacke", extremely rich in mineral elements (quartz, micas, chlorite ...) which will give the wine freshness and spicy character.

From the first nose, one is captivated by the sophisticated elegance of this fabulous spätlese: parchment, fresh tobacco leaf, ginger, chalk, white flowers, bramble wood, candied lemon, plum, freshly turned earth and many fine herbs ... the harmonious and playful farandole which springs from the glass is impressive.
On the palate, the low alcohol content (8.5% vol.) And the spicy dimension provided by the soil, on flavors of liquorice in particular, give the wine a beautiful lightness and real dynamism. The sweetness is accompanied by a remarkable finesse of texture: never heavy, always crystalline and moving, this Bockstein Riesling Spätlese, with a long and complex finish reminiscent of dragee, is a must on the menu of great sweet.

Domaine Van Volxem is one of the oldest and most famous estates in the Saar Valley, in the heart of Wiltingen. It is here, on the steep and vertiginous schist slopes overlooking the Saar that the Romans already cultivated vines in the 3rd century AD. After having long been one of the most famous wine-growing monasteries of the Moselle, the Domaine was acquired at the end of the 18th century by a wealthy family of brewers from Brussels, the Van Volxem.
Aware of the exceptional quality of these schist terroirs, facing due south in this region with a rather cool climate, and of the capacity of Riesling to express an incredible aromatic palette here, between flowers, fruits and spices, the Van Volxem will gradually raise the the Domaine's whites among the best wines of the entire former Prussian Empire. At the famous auctions in Trier, their wines were snapped up while at the end of the 19th century, they were found on the cards of the most prestigious establishments such as the Hotel Adlon in Berlin or the Ritz in Paris: they surpassed in price and enthusiasm for French wines as prestigious as Lafitte or Haut-Brion!
In 2000 Roman Niewodniczanski became the proud owner of this true jewel of the Moselle vineyard and its formidable heritage of old free-standing vines, located a stone's throw from the no less famous Egon Müller estate. Heirs to the Van Volxem wine philosophy, Roman and his cellar master and oenologist Dominik Völk are pursuing a work focused on the development of great local rieslings, dry or sweet, expressing as accurately and with great refinement the nuances of each plot.
Followers of ultra-meticulous manual work in the vines respecting the rules of organic farming, Roman and Dominik take care to limit yields so as to leave only the most beautiful berries to reach the most perfect physiological maturity. While they favor the most natural vinifications possible, without any oenological input (apart from a little sulfur to stabilize the wines), their sense of detail does not seem to have any limit. Latest example to date: Roman himself selected, with the famous Austrian cooper Franz Stockinger, around fifty oaks of around 300 years, in his own forests near Eifel, to make the new casks used at the estate, after more than 12 years of drying ...
In the end, the Domaine Van Volxem deliver extremely elegant wines, with complex aromas and impeccable structure. Wines rightly renowned for their exceptional aging capacity. Wines that never cease to impress world critics, raising themselves by their extraordinary purity of expression and masterful balances to those of the famous neighbor Egon Müller ... at much more affordable prices.
The Domaine's cuvées display masterful balances: there is the flesh and volume of a sunny vintage, but Dominik and Roman manage to preserve a beautiful acidity which makes each cuvée particularly sparkling. Wines carried by the energy of the soil, with spicy contours, around a fruity core of exceptional purity. Elegance and light are everywhere, for our greatest happiness.
