Mark Reynier, the former co-owner of Bruichladdich founded the Waterford distillery in 2015. Keen to emphasise the notion of terroir, he works closely with around 100 Irish farmers. In 2016, he produced the first organic Irish malt distillate and more recently, following the example of the greatest winemakers, he decided to distil a whisky from biodynamically grown barley.
This edition was distilled from barley grown by Francis Kehoe and harvested in 2016 in County Wexford.
At his Lacken Farm, which has been in the family for 4 generations, Francis is able to produce barley of exceptional quality thanks to the influence of the sandy, well-drained soil that makes up his sloping field.
But for this edition, Ned Gahan, the master distiller from Waterford, went even further by composing the cask blend with the teams from La Maison du Whisky, in a totally collaborative way and exclusively for France.
Several months of exchanges, tastings and adjustments later, here is a single malt of great complexity resulting from the blending of ex-bourbon casks, new American oak, French oak, port and marsala.
Tasting note:
Unpeated.
Colour: Apricot
Nose: Complex and fruity. Orange, dark chocolate, grapefruit, dried apricot berries, straw, barley, fruit biscuits, milky and floral notes (rose)
Palate: Spicy and smooth. White pepper, cocoa powder, orange zest and caramel on the attack, followed by greedy nutty and grapefruit flavours and an earthy touch.
Finish: Refined and greedy. Beautiful notes of sweet spices complete a smooth and enveloping texture.
