Single Malt Whisky

Mark Reynier, the former co-owner of Bruichladdich founded the Waterford distillery in 2015. Keen to emphasise the notion of terroir, he works closely with around 100 Irish farmers. The project has put the emphasis back on barley, at the heart of the final aroma of a single malt, through an ambitious triptych of 'Terroir, Traceability and Transparency'.

 

This "Extraordinary Journeys" micro-vintage is composed of four types of barley (Overture, Irina, Taberna and Propino) grown by 18 farmers on different sites.
Maturation took 3 years, 5 months and 27 days. The whisky casks were blended on 19 May 2021 before bottling in August 2021 (45% French oak casks from Château Margaux, 29% first fill American oak casks, 13% Vin Doux Naturel and 13% American virgin oak).

Tasting notes:

Unpeated.

Nose: Berry compote, barley sugar, freshly cut wet grass, beeswax, black pepper, rhubarb and cream candy, ripe banana, vanilla bean, fresh earth, apple pie and cream.

Palate: Poached pear, crème brûlée, malted biscuit, ginger, toasted almond, splendid mid-palate spice bomb, maple syrup, cinnamon, caramel cake.

Finish: A farandole of spices that lasts, gets dry and takes you on a journey!

Mark Reynier, the former co-owner of Bruichladdich founded the Waterford distillery in 2015.
Keen to emphasise the notion of terroir, he works closely with around 100 Irish farmers.

In 2016, he produced the first organic Irish malt distillate and more recently, following the example of the greatest winemakers, he decided to distil a whisky from biodynamically grown barley.

Using 100% Irish barley, recognised as the highest quality in the world, the Single Farm Origin range is a series of limited edition natural whiskies of the highest quality that reveal the Irish terroir farm by farm, place by place.

They are an expression of precision and rarity, revealing the aromas and flavours of barley grown on small Irish farms and varying with each harvest.

The ultimate aim is for the combination of these different single farms to create the most unique, complex and profound single malt whisky in the world. But within this range, they are the first step in revealing natural whiskies where barley and the influence of terroir come first.
