Mark Reynier, the former co-owner of Bruichladdich founded the Waterford distillery in 2015. Keen to emphasise the notion of terroir, he works closely with around 100 Irish farmers. In 2016, he produced the first organic Irish malt distillate and more recently, following the example of the greatest winemakers, he decided to distil a whisky from biodynamically grown barley.
This edition was distilled from barley grown and harvested in 2015 by Martin Foley on Hook Head in the far south of County Wexford, known for its lighthouse and changing climate.
Strongly influenced by the clay and loam soil, but also by salt storms, sea fog and ocean breezes, this expression reveals beautiful spicy (nutmeg, white pepper...) and mineral notes that wonderfully complement its malty and greedy character.

Non-peated.
Colour : Straw
Nose: Mineral and gourmet Citrus peel, bread crumbs, nutmeg, white pepper, caramel, milk chocolate, salted popcorn, oak, earthy, herbal and farmy notes
Palate: Malty and spicy. Nutmeg, white pepper, salted butter toffee, liquorice, ginger biscuit, spicy chocolate and citrus
Finish: Long and spicy. Although dry, the finish leaves a very persistent oily and spicy character.
