In 2001, the Lurton brothers acquired a vineyard in a magnificent terroir on the borders of Corbières, a forgotten region. They restore the vineyard and make it the flagship vineyard of the Fitou appellation. The choice to keep the trio of typical Languedoc grape varieties (Carignan, Grenache and Syrah) at Château des Erles allowed them to achieve a remarkable overall balance on this exceptional schist (slate) terroir.
Manual harvest in crates. The grapes are passed through sorting tables and then destemmed. The Carignans are vinified in carbonic maceration. The Syrahs and Grenaches are vinified in the traditional way. A cold maceration is carried out before the start of fermentation as well as a final hot maceration to perfect the extraction of polyphenols. Malolactic fermentation takes place in vats. Aging for 8 to 10 months in Bordeaux barrels (225 Liters) new at 50% and 50% of 1 wine, then assembly, fining and bottling.

A smooth and supple wine, with seductive aromas of Asian spices, pepper and smoke, and surprising purity of fruit in its rich flavors of black plum, blackberry and kirsch. A long and intense finish with notes of olives and blackcurrant.
