Somewhere on the edge of the Languedoc, in the upper valley of the Aude. In the Roquetaillade cirque, a conch carved out of the great swell of the Pyrenean foothills, Mediterranean and Atlantic climates clash from one side to the other, from the scrubland to the undergrowth. Crisp, crystal-clear air, peaceful atmosphere, cascading vines. The promise, inevitably, of wines in a class of their own.
A native of the village, Gilles Azam bought his first vineyard in 2000, and then patiently laid down each milestone of a 13-hectare certified organic estate.

The Domaine Les Hautes Terres is the property of Gilles Azam, located in Roquetaillade, west of Limoux, in the Haute Vallée de l'Aude, at the foot of the Pyrenees. A passionate, authentic and very rigorous winemaker, Gilles Azam has been working at Domaine Les Hautes Terres since 1999.
The vineyard of the Domaine Les Hautes Terres now comprises 9 hectares of vines divided into 12 plots situated between 350 and 600 metres in altitude, covering all the terroirs of Roquetaillade: causse of lacustrine limestone, deep clay-sandstone soil (Nummulite sandstone), and the famous Turritelle marl. Since 2000, the vines of the Domaine Les Hautes Terres have been cultivated in certified organic agriculture. In the cellar, the same precepts of naturalness and authenticity prevail, with the use of indigenous yeasts.
The wines of Domaine Les Hautes Terres are marked by a beautiful finesse and freshness, and reveal nervous and brilliant whites with fine bubbles, and taut, clean and elegant reds.
The palate is very well built, fleshy but borrows a great freshness while tension. A great white wine from the south!
