This original property, located in the poetic environment of the Causse de Siran, is managed by Cécile Boyer-Domergue, always helped by her mother Patricia. Their wines are the result of work of exemplary integrity, focused on the cultivation of rare or forgotten grape varieties. The expression of the fruit on the nose is always a little candied, while on the palate the wines show rare elegance and great finesse in texture, especially the pure cinsaults. The great cuvées are only sold at their peak. The estate produces a pretty dry white made from forgotten varieties: white araignan, white and gray riveyrenc, as well as a raisined harvest, Erme, in the spirit of "noble wines" formerly produced in Minervois. We must salute the uniqueness and strength of this approach, winegrower and memorial, which offers a major landmark, not only for the Minervois, but for the whole of Languedoc.
