On his 6.5 hectare estate, Rémi Jalliet brings together ten or so plots of vines aged between 35 and 80 years old, scattered on clay-limestone slopes, amidst the garrigue and rocks around the village of Villesèque-des-Corbières. The diversity of the soils and subsoil, the exposures, the very rich environments and preserved by the artisanal culture in agrobiology participate in the intensity and the complexity of its wines.

34% grey grenache, 33% white grenache and 33% black grenache.
Tasting notes :
Deep yellow colour. The bouquet is complete and envelops floral, vegetal and fruity notes. Orange blossom and juniper mingle with the sweet scents of cut hay nuanced by citrus notes. Vibrant, the palate offers superb mineral tension with length.

Originally from Paris, Rémi Jalliet discovered wine through tastings and meetings. He decided to become a winemaker, obtained a diploma, worked for a while as a manager and very quickly started looking for a vineyard. He chose a few hectares of vines located in Villesèque, in the Corbières appellation area, more precisely in the Durban sector.
This Corbières cru is located on the border of the Aude and Pyrénées-Orientales departments, 20 kilometres from the Mediterranean. The particularity of the Durban terroir is that it is situated in a fault line which results in a mix of very different geological ages. This diversity of soils and sub-soils, often on the same plot, contributes to the complexity of the wines. Moreover, this terroir is surrounded by relief at an altitude of 400 to 700 m and benefits from colder winters and nights.
Rémi Jalliet's estate now covers 6.5 hectares. It includes a dozen parcels of vines between 35 and 80 years old, scattered on clay-limestone slopes, in the middle of the garrigue and the rocks.
Since the beginning in 2006, the vines are managed according to the principles of agrobiology (organic certification since 2009).
In the cellar, the maceration lasts from 3 to 5 weeks in vats. Extraction is done slowly and gently, to obtain concentration while preserving the roundness and aromatic expression. Pressing is done manually in a small vertical press. The wines are matured on their fine lees in vats or in barrels of a few wines for the most concentrated. The wines are neither fined nor filtered before bottling. The doses of added sulphites are low.
While taking the time to do things himself, Rémi is constantly on the move: building a new, more functional winery, restructuring quality plots... There is no shortage of projects!
Rich in aromas and flavours, Rémi's wines have a lot of charm. Powerful but balanced, they offer a beautiful expression of the wild terroirs of the Corbières.
The nose is complex, evolving with aeration from the cherry to spices. Round and silky with a good tannic presence, this wine is ample and long.
