The terroir of the Palette appellation is located on the lake limestones of Langesse and Montaiguet. The Palette vineyard is found only on soils made uniform with limestone scree, that is to say on skeletal soils of little thickness and stony. It is protected from northerly winds by the Langesse and Grand Cabri hills, but by the Arc Valley it is subject to westerly / northwesterly winds. The exposure mainly to the north almost always requires late harvest.
Grape varieties:
80% clairette, 10% grenache blanc, 10%, 5% bourboulenc, 3% ugni blanc, 2% muscat blanc.
Vines over 50 years old (some plots are over a hundred years old).
Tasting Notes:
With its fabulous aromatic complexity, which is revealed in successive waves, this Palette is for us one of the greatest successes in the already long history of Château Simone!
The more you air it, the more talkative this Palette becomes: first the candied fruit, dates and dried figs, then the orange peel and kumquat. Then comes a maritime touch reminiscent of a fine sandy beach and starfish. The footprint of the soil is omnipresent, also giving the bouquet a ferruginous dimension. Gradually the bouquet releases sensual and terribly greedy notes of mirabelle plum, barley sugar, mountain honey, candied apricot and lemon, fresh wax, milk jam and Isigny caramel. The freshness is there, expressing itself on evocations of bergamot, rhubarb, broom and damp soil. It’s downright fascinating!
And what about the mouth: how to resist this suave and tender start, but always clear and formidably precise? No sleeve effect but a haute-couture aging which magnificently underlines the substance and the intense flavors of this formidable Château Simone, on evocations of apricot jam, marmalade, rhubarb and honey, completed with a touch of 'herbs (we think of tarragon).
The final, tasty, intense and tight, is wonderfully supported by a splendid energy.

The oldest trace of viticulture at Château Simone dates back to writings from 1552. The estate then belonged to the monks of the Grands-Carmes d´Aix, who dug the cellars of the castle in the 15th or 16th century. Château Simone then passed into the hands of different known Provencal families, such as the Pascalis. Nicolas-Toussaint Rougier, the first in a line of winegrowers, acquired the 8 hectares of the estate with a northern exposure in the 1820s. He produced white and red wines there for a local clientele, in particular the Aix bourgeoisie. At the end of the 19th century, phylloxera ravaged the entire vineyard of Château Simone. A descendant, Albert Rougier, is working to replant a large majority of the vineyard with the Clairette grape.
The next generation, embodied by Jean Rougier, put together a dossier in 1946 to obtain a full appellation for Château Simone. The geographical location of the vineyard, isolated by a forest, justifies this request. It was in 1948 that the estate obtained the Palette appellation.
In 2016, Jean-François Rougier is the seventh generation to take care of the terroir and its vines, which have always been treated with organic methods.
“La Simone”, as the Rougier family likes to call it, is certainly the most famous vintage in the eyes of lovers of fine Mediterranean white wines. It is true that René and Jean-François Rougier cultivate this white far from any technicality, displaying an incredible breed, balance and fullness. One of the secrets lies in the slow pressing and the twenty-month aging in tuns, then in barrels. It is also the fruit of an 8 hectare plot, planted with several grape varieties, mainly Clairette (with 2% Muscat which makes the difference!), Harvested and vinified assembled.
Rosé, Simone's other asset, always appears colorful, with intense fruitiness. Its mouth, of great concentration, offers aging potential.
The red has now reached the size of certain great wines from the south of the Rhône valley. Grenache and Mourvèdre give it a spirit embodied by a level of maturity and a more mature palate than in old vintages.
