Lucien Aviet's Vin Jaune is made with Savagnin grapes from several plots of land, but whose terroir is composed of grey marl. The grapes are harvested by hand and immediately pressed.
The wine is aged for 8 years in 228 litre barrels and demi-muids, under veil, according to a historical oxidative process. Indeed, the maturing of this wine is carried out without topping up, i.e. without completing the part of the wine that evaporates, better known as the famous "angels' share". A veil of yeast will then form on the surface of the wine, protecting it from rapid oxidation by avoiding direct contact with the air.
This slow, unique and mysterious process of elaboration gives this wine its typical aromas.

This yellow wine has a broad and round attack. This almost sweetness is relayed by a lively, invigorating acidity, which gives the whole a rare charm and great consistency.

The Domaine Le Caveau de Bacchus has existed since the early 1960s. Created and operated by Lucien Aviet, the estate has been passed down from father to son. Lucien, also called Bacchus (god of wine) is a figure of the Jura vineyard. His estate has become a real institution, a business for enthusiasts that pays tribute to the Arbois terroir.

It is now Vincent Aviet, son of Lucien known as “Bacchus”, a key figure in the Jura vineyards, who perpetuates the traditional expression of local wines on plots of old vines located around the wonderful wine-growing village of Montigny-les-Arsures.

Maintaining a classic style but far removed from any routine, these winegrowers produce wines of great sincerity, deeply rooted, which culminate with yellow wine and superb trousseaux declined by terroir (remember that Montigny is the epicenter of the trousseau, cradle of the famous lady's trousseau, with very airy grains).

The 6 hectares of vines are located in the heart of the Jura vineyards, above Arbois, in Montigny-lès-Arsures. The vineyard is around 35 years old and consists exclusively of local grape varieties such as Trousseau or Savagnin. In the vineyard, reasoned pest management is used, the harvests are manual and by plot. Indeed, the Jura vineyard is steep and requires special care in order to preserve the integrity of each of the clusters.

The grape variety is typically Jurassic:

The trousseau is a red grape with lovely aromas of black cherry and kirsch. Fruity and peppery aromas bring greed, structure and body to the cuvées. At the Caveau de Bacchus, it is generous and fleshy.

Savagnin is used in the production of yellow wines. At the estate, this dry white wine, typical of the Jura. has undergone an oxidative aging of 8 years under veil of indigenous yeasts. These bring aromas of nuts to the wines.

The wines are quite rare and the amateurs are numerous: an area to follow very closely.
