A very clean wine, with a deep bouquet typical of garrigue and fresh earth. Crisp and fleshy on the palate, the flavours announced on the nose are found with a very pleasant juicy sensation. A dynamic wine, with a frank chewiness and airy tannins. Very good balance between power, freshness and generosity.
Already delicious, there is no doubt about its ageing potential.

The estate was created in 2004 by Frédéric and Marie Chauffray, passionate and self-taught winemakers, in one of the highest and therefore coolest areas of the Terrasses du Larzac. The 14 hectares of vines overlook the Hérault Valley, at an altitude of 400 m. This vineyard takes root on poor limestone soils exposed to the north wind.
The idea of naming the estate after their house, La Réserve d'O, came from the desire to create a nature reserve where grapes could be produced in an ecosystem rich in both flora and fauna.
The agronomic approach is biodynamic. Like the viticulture, the vinification is very close to the natural cycles, meaning that there is little intervention.
The wines have quickly distinguished themselves by their playful greediness, far from the sometimes ascetic seriousness of certain wines of this young and very dynamic appellation. The style is recognisable and, in a few years, the estate has proved itself, from the delicious sulphite-free SanSSoo, which takes over the name Saint-Saturnin, threatened with obsolescence, to longer maturing exercises which are evolving happily.
With very marked day/night temperature variations in the summer, the grapes mature slowly and give our wines elegance and great aromatic complexity.
A very fresh and delicate wine, with notes of citrus and white fruits. Nice mineral touch.
The dominant flavours of blackcurrant, blackberry and liquorice mark the identity of this well-structured wine. A concentrated Languedoc in a bottle!
