Produced from the estate's old vines, the Bel-Arme cuvée comes from limestone terraces situated directly on the slopes of Cap Canaille. The northern exposure allows the wine to retain a nice freshness.

Vinified with indigenous yeasts and matured on fine lees in ovoid concrete vats for several months, the wine is then bottled without fining or filtration. It then expresses straightforwardness and balance around a beautiful, fresh and finely saline body. Its minerality and its fine bitters will allow it to accompany a meal around Mediterranean fish, white meat or shellfish. It can also be aged for several years in the cellar.

Grape varieties:

55% marsanne, 20% ugni blanc, 20% clairette and 5% bourboulenc.
Average age of the vines: 50 years.

Tasting notes :

Fine nose evoking white flowers and lemony aromas. The palate is complex with a nice fatness. Iodized finish with fine bitters that enhance the wine.

Scallop sushi in a lime, mango and nori seaweed marinade. Pan-fried rabbit saddles in ballottines with roasted hazelnut butter.

Located on the sea front, on the Cassis coastline, Clos Sainte Magdeleine is without doubt one of the exceptional estates of the Cassis appellation.

For four generations, the Zafiropulo family, Greek industrialists who immigrated to Marseille in the 19th century, have been passionately committed to producing great Cassis white wines.
Since 2010, Jonathan Sack-Zafiropulo has been ensuring the continuity of the family tradition at Clos Sainte Magdeleine. He has undertaken the development of organic viticulture on the estate as well as the enhancement of the terroirs through parcel-based vintages.

            
In the Clos Sainte Magdeleine parcels, the vines are harvested by hand in order to guarantee optimal grape maturity. The grapes are harvested very early in the morning to ensure that the juice is at the right temperature and to avoid any early start to fermentation.
Once the grapes have arrived at the winery, they are pressed and then put into fermentation tanks.
After fermentation, the wine is bottled and placed in the cellar where it will rest in ideal conditions. Indeed, the Clos Sainte Magdeleine has a vast underground cellar which allows a large number of bottles to be stored in conditions (temperature, hydrometry, luminosity, etc.) that are favourable to the ageing of the wine.
