This cuvée has been matured for 10 years in 228 and 400 liter barrels under veil.
Sail wines are characterized by the development, after alcoholic fermentation, of yeasts forming a veil on the surface of the wine, in contact with ambient air (during its aging phase in barrels). This practice, which is not widespread for wine because of the risk of acetic puncture during storage in non-wet containers, gives it specific organoleptic characteristics (aroma of fresh walnuts and very long finish in the mouth, in particular). Among the wines matured in this way, we can mention the famous wines of Jerez in Andalusia or the classic yellow wines of Jura.

This cuvée is a rare wine of incredible complexity and length in the mouth!

Grape varieties:
80% uni white (trebbiano, 46-year-old vines), 20% grenache gris (centenary vine).

Tasting Notes:

The color is yellow, very clear and underlined with golden reflections. Bitter almond, green apple, pine cone, roasted notes dominate a very intense, almost violent and well-typed nose. The attack is straight, tense. The alcohol is present but balanced by a pronounced acidity and a marked dryness of taste despite the oxidative mark. The wine continues on the finish with notes of apple and lime, bringing a pleasant freshness.

Pierre Quinonero, from the Garance estate, is one of the best winemakers in Languedoc.

First vintage bottled in the estate: 1998. Since then, Pierre Quinonero has been learning his terroir (only 6.5 hectares) and experimenting with his methods of vinification slowly and gradually.

The last vintages really come out of the lot: for proof, the recognition by the Guide de la RVF (Revue des Vins de France) of the Best Wines of France, now qualifying the domain (in organic since 2011, date of the return to ploughing on horseback) of very large area This promotion is illustrated with a full page presenting this growing field: The renaissance of the Languedoc vineyard is carried out by called vines, strong heads who live their profession as a winegrower more as a priesthood than as a rent. Located at altitude (400 m), the estate enjoys a very beautiful terroir, very diverse also: basalt, limestone, rolled pebbles ... among others. Most of the plots are in Caux, a small village near Pézenas. The vineyard is composed for the reds of old carignans (75 years on average), black grenaches, syrahs and black pinots, and for the whites of very old ugnis (which he calls trebbiano As in Italy), grey and chardonnay grenaches (some are centuries old). All new plantations are the result of mass selections. The yields are ridiculous (about 20 hl/ha depending on the vintages), and the harvest is manual and in boxes to avoid damaging the berries, themselves sorted from the moment of arrival at the cellar to keep only the perfect ones.

His whites, worked on oxidatives, are powerful and of great originality. Its red wines offer relief and personality, like Armières (Carignan majority and syrah supplement), which it is recommended to carafer. in their youth and who have great potential for custody.
